The Blackthorn creed

Flavor writes the rules.

Blackthorn is not one style, one tradition, or even one kind of ferment.

It is an evolving cellar built from grain, fruit, honey, living culture, and time. We use precision where it serves the glass—and instinct where the map runs out.

A saison can become a solera. A mead can borrow from wine. A culture can outlive the recipe that made it. The flavor decides what the thing becomes.
